YUMMY Egg Fried Rice - made with love!

I still remember that sudden wave of egg fried rice hype that swept through Singapore during the pandemic. maybe it was because of Uncle Roger’s viral series of fried rice critiques, or all the new hawker stalls popping up around the island, many run by “ex-chefs” from famous restaurants like Din Tai Fung. who knows… fast forward to 2025—I’m glad I never found myself in one of those long queues. however, looking back now, I still wonder: was all the hype really worth it… for just one plate of fried rice?
for some, maybe it’s just another quick meal to fill the belly. for others, it’s the irresistible wok hei and rich flavours that keep them coming back but sometimes, a plate of fried rice can mean so much more—it holds a memory, a gesture of love, and the comfort of being cared for.
we met Clara, a paramedic officer from SCDF, who shared that egg fried rice is one of her all-time comfort foods. after a long or tough shift, her mum would always whip up a plate for her. the familiar aroma of fried rice waiting at home instantly lifts her spirits and makes the exhaustion of the day feel worth it.
we made this egg fried rice A LITTLE MORE special, with additional steps of creating and scraggly egg floss which we tossed into the rice, for additional flavour and texture - ‘cause I guess we’re EXTRA like that.
so maybe the next time you find yourself queuing for hours for a plate of fried rice, think twice—it might be even more satisfying to make your own (or better yet, have someone make it for you with love hehe).

EXTRA SPECIAL Egg Fried Rice
(serves 2)
3 cups leftover cooked rice
1 egg yolk, beaten
2 tsp light soy sauce
1 tsp mushroom seasoning
1 tbsp white sugar
3 tbsp oil
3 spring onion, sliced (separate the white & green parts)
2 cloves garlic, minced
1 Chinese sausage, sliced (we used the halal chicken ones), OR 6 shrimps, diced
egg floss:
2 eggs
1/4 tsp cornstarch
1 tsp fish sauce
oil, for deep frying
directions
making the egg floss:
in a bowl, beat together eggs, cornstarch, and fish sauce
heat oil in a wok on medium-high heat. then, hold a strainer on top of the pot from a distance and pour in the egg mixture, letting the eggs drop into the hot oil in thin streams, instantly creating scraggly bits of egg. do this process bit by bit, according to the size of your wok.
fish out the egg floss with a spider strainer and drain on top of a rack or on paper towel.
making fried rice
mix well the rice with egg yolk, soy sauce, seasoning and sugar until every grain of rice is coated with yolk. set aside.
in a wok on high heat, add oil. when the oil is hot and almost smoking, stir fry the white part of spring onion and garlic until fragrant, for a few seconds. add the meat (sausage or prawns) and saute for a few seconds.
add the rice mixture and toss making sure the egg cooks and the rice gets light char. toss in the egg floss and stir well to disperse. lastly, toss in the green spring onion for a few seconds and serve.
