Selamat Hari Raya everyone! Hope you guys had a good time with friends and family.

Nasi Goreng Kampung

sambal paste:

6 shallots, peeled

5 garlic cloves

8-10 red chillies

2 chilli padi (according to preference)

3 tablespoons dried anchovies (ikan bilis)

1 thumb-sized belacan, lightly toasted

4 cups cooked rice

3 tbsp light soy sauce

1 tbsp kecap manis

1/2 chicken stock cube

2 eggs, beaten

Salt, to taste

1/2 cup ikan bills, deep fried

1/4 cup oil

Directions:

  • Pound in a mortar or blend all the ingredients for the sambal paste. Set side.

  • Soak 3 tbsp ikan bills in water for 10 minutes. Pound it into a paste.

  • Heat oil in a wok or pan on medium heat. Fry the sambal while stirring, until the fragrant. This may take about 1-2 minutes

  • Increase the heat, and add in the beaten egg. Scramble into small pieces. Combine the cooked rice, soy sauce, kecap manis and stock cube.

  • Toss the rice well with all the ingredients until dry and the sambal is distributed evenly. Season with salt and sugar if required.

  • Serve and top with crispy ikan bills and a side of cucumbers.
