Recreating Grandma's Nasi Goreng Kampung

This year, we had the privilege of cooking for a young delivery rider whose dream is to save up enough money for his mom’s umrah (im not crying, u are) – so we offered to make him a nostalgic Nasi goreng kampung for Iftar.

Nasi Goreng Kampong
(serves 4)
4 cups cooked rice, chilled
2 tbsp light soy sauce
1 tbsp kecap manis
1/2 chicken stock cube, mashed
2 eggs, beaten
salt, to taste
1/2 cup ikan bills, deep fried untill crispy
5 tbsp oil
1 cucumber, sliced
sambal paste:
6 shallots, peeled
3 garlic cloves
8 red chillies
2 pcs chilli padi (or according to preference)
3 tablespoons dried anchovies (ikan bilis), soaked in water awhile to soften
directions
pound in a mortar or blend all the ingredients for the sambal paste. set side.
heat oil in a wok or pan on medium heat. add the sambal paste with the stock cube and stir-fry until fragrant. this may take about 2-3 minutes.
increase heat, and add in the beaten egg. scramble into small pieces. then, toss in the cooked rice, light soy sauce and ecap manis.
toss the rice well with all the ingredients until dry and the sambal coats the rice evenly. season with salt and sugar if required.
serve and top with crispy ikan bills and a side of cucumbers.
