10 minute recipe: Kimchi Fried Rice

if you’re looking for a quick and easy meal to show someone a little love, try this foolproof kimchi fried rice recipe.
I’m not sure about you, but food is definitely my love language — and honestly, it doesn’t have to be anything fancy. when someone cooks for me, no matter how good (or bad) the dish turns out, I can feel the effort, the time, and the care that went into it. and that alone is enough to bring me comfort.


so if you have someone in mind today and don’t know what to cook, don’t overthink it! I’m sure they’ll see your heart through your effort. now stop procrastinating — you’ve got someone to feed!
Oh! and did I mention? this recipe is halal-friendly too!
Kimchi Fried Rice
(serves 4)
4 cups cooked short grain rice (chilled overnight)
1/4 cup oil
3 cloves garlic, minced
3 stalks spring onion, only the white part, sliced
2 tbsp gochujang paste
3 tbsp water
1 cup kimchi, chopped
2 tbsp kimchi juice
2 tbsp fish sauce
1 tsp sugar
150g luncheon meat, cubed
3 tsp sesame oil
3 spring onion (green part), sliced
2 tbsp roasted sesame seeds
A bit of shredded seaweed (gim)

directions
in pan, heat 1/4 cup oil. pan fry the luncheon meat until it gets browned on all sides. Remove from oil and drain on paper towels.
remove the oil until it’s left with about 2 tbsp of oil. saute the spring onion and garlic until fragrant. add gochujang and add water and kimchi juice. Stir well to loosen the gochujang.
add the fish sauce and sugar and stir well. add cooked rice and stir - fry on high heat until all the rice gets coated with the seasoning sauce. add the kimchi and stir-fry well.
fold in the green sliced spring onion and the fried luncheon meat.
serve on a plate and sprinkle sesame seeds. garnish with seaweed and a fried egg.
