in the spirit of the beginning of the Year of The Snake, we’re bringing you a recipe for M*Don*ald’s-inspired Prosperity Burger, blessed by 财神爷 (God of Fortune) himself! honestly, this was SUPER easy to make and we wondered why we didn't make this earlier at the nOm studio.
also, this was approved by our resident 嫦娥 herself & tastes super close to the real deal, according to her. try making a batch of these for the long CNY holidays!
nOm Prosperity Burger
patty:
600g minced beef
3 tbsp oil
salt, to taste
1 white/yellow onion, sliced and soaked in water to remove sharpness
prosperity sauce:
3 tbsp unsalted butter
3 tbsp freshly ground black pepper (trust us, it’s so much better freshly grounded)
3 cloves garlic
5 shallots, minced
1.5 tbsp plain flour
1 tbsp oyster sauce
2 tbsp light soy sauce
2 tsp dark soy sauce
1/2 cup milk
1/2 chicken stock cube
1 tsp brown sugar
1/2 cup water
homemade, no-mixer buns:
450g plain flour
2 tbsp honey
11 g instant dry yeast
1 tsp salt
240ml warm milk
30g butter, softened
1 egg
1 egg yolk + 3 tbsp milk (for brushing)
2 tbsp sesame seeds
directions:
bake the buns
combine the warm milk, yeast, honey, salt, whole egg and butter in a bowl. give it a light whisk, cover and set aside for 10 minutes. the mixture should get foamy from the yeast being activated.
combine the plain flour and thoroughly mix using a wooden spoon until it becomes a shaggy dough.
dust some flour onto a clean surface and transfer the dough onto it. knead the dough continuously for 5 minutes or until it comes together to an elastic dough.
portion the dough into 6 equal pieces, roll in to balls and loosely cover with cling wrap. let it proof at room temperature for 30 minutes.
then, take each ball and stretch it into a an oblong shape. lay the oval buns onto a tray lined with baking paper. loosely cover with cling wrap again and let it proof for another 30 minutes. meanwhile, preheat oven to 175 deg Celsius.
whisk egg yolk and milk and brush onto the buns. sprinkle sesame seed on top and bake for 12-15 minutes or until bund are fully baked. let it cool on a rack for 20 minutes before cutting open.
making patties
portion the patties into 6 equal pieces. using your hands, flatten the meat and form them into ovals, just slightly larger than the size of the buns. season the top side with some salt and pepper. place on a baking paper and let it rest in the fridge for 10 minutes.
heat oil on a griddle and and sear the patties. press down with a spatula to let the bottom brown. flip and cook the other side. remove from pan and let it rest on a plate.
cooking the heavenly sauce
using the same pan with the beef drippings, melt butter and sauté the shallot and garlic until translucent.
sprinkle in the flour and stir for 2 minutes to make a roux. pour in the oyster sauce, light soy, dark soy, milk, water and half of the black pepper. add in the stock cube and stir well. cover with a pan and let it simmer for 5 minutes.
season with sugar and the rest of the black pepper. check for seasoning and consistency.
bring everything together
to assemble, spread some butter on the halved buns and lightly toast. dunk a patties into the thick prosperity sauce and lay onto the bottom bun. arrange raw onion slices. for a DOUBLE burger, lay on another dunked patty and some more onion.
lay on the top bun. serve with curly fries on the side and enjoy!
