Fish Yong Tau Foo, from SCRATCH!
we didn't realise it was THIS rewarding to make our own YTF from scratch
if y’all have seen our previous recipes, we’ve made a version of Yong Tau Foo using pre-stuffed Yong Tau Foo items. This time, we’re taking it up a notch and making EVERYTHING from scratch. Yes, filling, sauce, soup, all of it!
throughout this process, we realise that making fish paste for YTF turns out to be simple to do - & the upside is that you could be sure that the end product consists of 100% fish as compared to the store-bought fish pastes.

Home-made Yong Tau Foo
fish paste:
300g yellowtail fish fillets (you can also scrape the meat from the whole fish)
1 tsp MSG
1 tsp white pepper
1/2 tsp sugar
YTF items:
1 bittergourd, sliced 2-inch thick and cored
1 medium Chinese eggplant, cut 2 inch thick
6 pcs fried beancurd skin (taukee)
1 red capsicum, quartered
3 firm tofu quartered, slit in the middle
other YTF items of choice such as broccoli, spinach etc.
directions
combine fish paste ingredients in food processor and blend until it become a fine paste. transfer to a bowl. using your hand, ‘whip’ the fish paste for 30 seconds to aerate it. this process also helps to achieve a bouncy texture after it is cooked.
using a spoon, fill the crevice of the yong tau foo items; gill the hollow of tofu, bittergourd and capsicum, spread it in between the 2 pcs of taukee and 2 pcs of eggplant respectively.
let the ingredients rest for at least 1 hour in the chiller to let the fish paste set.
