i have been blessed to grow up with my grandmother who always makes 3 dishes & 1 soup every time i visit her. out of all the soups she have made, this ranks as my favourite soup, EVER. i love how simple but yet tasty this soup turned out to be. moreover, i’ve heard that this soup is unheard of, so do try it out and i hope you all enjoy it as much as i do ❤️

Apple Pork Soup
serves 3-4 pax
500g of pork ribs
7-8 red dates
1 orange peel
2 honey dates
1 big apple
2 tbsp of goji berries
directions
wash all the dry ingredients and set aside. scrub the pork ribs with salt and rinse it well, set aside. for the apple, scrub the skin well with baking soda (as it can make the soup bitter)
bring a pot to a boil, and parboil the ribs, to remove blood and impurities, remove pork once the water start to become cloudy with scumbs, about 5 minutes. rinse the pot and fill about 3/4 full of water
bring water to a boil and pour in meat, dates, orange peel. boil for another 10 minutes and bring down to a low boil, for about 1 hour or until the soup smells fragrant and the meat is tender
then add in apples and goji berries and continue simmering till apples are tender
serve immediately, or keep it warm in a thermal container to allow the flavours to deepen more! enjoy
