FOOLPROOF + HOMEMADE Peking Duck??
save your money at upscale Chinese restaurants & make your own at home
this one’s a kitchen project I’ve been waiting to try out in a VERY long time… especially since watching KwokSpots’ recipe video on Youtube, to which this recipe is accredited to. another push for me to make Peking Duck at home was the fact that HALAL-certified Peking Duck is hard to come by in restaurants in Singapore & I really wanted my family to be able to try it.
my process of acquiring the ingredients for this was easier than I expected. if you’re in Singapore & looking for duck which has gone through halal slaughter, supermarkets like Sheng Siong carry PERAK DUCK imported from Malaysia, sold as a whole bird.
the only challenge was to source for the right apparatus to accomplish the feat, particularly meat hooks (to hang the bird during the drying process), a bicycle pump (for separating the skin form meat & fat for optimal crispiness) & cake tester which I used to sew the cavity to contain marinade while the duck roasts.
with a bit of time (2 days to be exact), patience and a large enough oven, you too can achieve Peking-style duck at home. While it might not be up to par with the top restaurant ones, it would DEFINITELY be the talking point at dinner parties if done right.
