@thepantryboy never fails to surprise again, and this time with a special birthday dish significant to the local Portuguese-Eurasian community. this dish also turns out to be super easy to make, with taucheo being the main flavouring component, complemented with the natural sweetness of fresh seafood and succulent & fatty pork belly.
Eurasian Birthday Noodles
serves 3-4
6 tbsp oil
4 eggs, beaten
5 cloves garlic
3 tbsp taucheo
200g roasted pork belly
1 large squid, cut into rings
250g prawns, peeled
3 tbsp fish sauce
400-450g yellow noodles
100g beansprouts (taugeh)
3 stalks chye sim / bok choy
2 stalks coriander leaves
3 red chillies, sliced
directions
to make the omelette, heat 2 tbsp oil in a wok / frying pan on medium to high heat. add the beaten eggs, to cooke the omelette. once the bottom side is nicely browned, turn over to cook the other side.
place the omelette onto a cutting board. roll omelette into a cigar and slice thin. set aside.
in the same wok on high heat, add 3 tbsp of oil. stir fry the roast pork belly pieces until slightly charred. and in the the garlic and saute until fragrant. next, add in the prawns and squid fry until seafood is about half-cooked.
throw in the yellow noodles, beansprouts, taucheo, fish sauce and red chilli. stir fry until noodles soften and are fully coated in seasoning.
toss in the coriander leaves. serve on a plate and arrange the sliced omelette on top. alternatively, you can toss the omelette in as well.
